KID APPROVED GLUTEN-FREE, Mini VEGAN MUFFINS - Pumpkin Choc Chip
Just sweet enough to curb the cravings and healthy enough to kick the guilt to the curb!
**This recipe makes 24 minis
1 cup organic pumpkin puree - farmers market
1/2 cup non-dairy butter - earth balance
1/2 cup maple syrup - local if you can find
1 tsp vanilla ext
1 1/2 c (sifted) oat flour - bob's red mill
1/2 tsp baking soda
1 1/2 tsp baking powder
pinch of salt
1/2 cup mini dairy-free chocolate chips - enjoy life
Directions:
-Combine wet ingredients and whisk them together
-Blend dry ingredients
-Add to the wet mixture and fold in.
-Chips are the grand finale.
-BAKE 350 25-28 minutes in greased mini muffin trays or add liners to the tray if that suits your fancy.
