The World’s Best GLUTEN-FREE Banana Bread

Not only do I love when the house smells like there is something baking, but this recipe tastes like home.

Gluten-free banana bread in polka dot liner

1 1/4 cup (sifted) gluten-free oat flour - bob's red mill

1 tsp xanthum gum

1 tsp baking powder

1/2 tsp baking soda

pinch of salt

1/2 cup non-dairy butter - earth balance

1/3 cup (local if possible) maple syrup - local if you can find

1 organic cage-free egg

2 organic very ripe bananas

1/2 tsp lemon/lime juice

Directions:
-Smoosh bananas and then add all the wet ingredients to the bowl and mix together.

-Combine & mix the dry stuff and then add to the wet.

-Stir all together then pour into a greased mini loaf pan or 6 mini loaf cups.

-BAKE 350 degrees for 30-33 MINUTES

-Once removed let them cool in the pan, then transfer to a cooling rack.

-Store in the fridge.
